Fallon Beckham grew up watching her mother, Amanda Cumberland, cook. 

As she went through her teenage and adult years, she put her cooking skills to great use and could even be considered famous by friends and family for her homemade recipes. 

Fallon grew up in Philadelphia and graduated in 2014 from Neshoba Central High School. In 2016 she graduated from East Central Community College with an Associates degree in Science. Fallon then attended Meridian Community College and became a Licensed Physical Therapist Assistant. 

“I became a therapist to aid and educate patients in correct functional movements to cut injuries in daily living.” Fallon Beckham said. 

In Fallon’s free time she enjoy’s listening to true crime podcasts, playing disc golf with her family and walking at the park. 

Fallon Beckham is also the mother of a soon to be two-year old boy named Lewis Riley Marston. His father, Will Marston, works at Marshall Ford of Philadelphia.

When Riley’s father is not busy selling cars at Marshall Ford he is teaching him all about sports such as golf, football and basketball. During football season Fallon’s family loves attending games at Mississippi State University. 

Fallon’s family will be celebrating Riley’s birthday this coming up weekend, where her yummy Twice Baked Potato Casserole may be spotted. 

Riley is an active soon to be two-year old who loves to jump on his small trampoline and ride in his stroller at the park or around the yard. 

“We have watched Cars, Dino Trux, Disney, and Nick Jr. a lot,” said Fallon Beckham. 

Beckham is a PTA (Physical Therapist Assistant) at Anderson Outpatient Rehabilitation in Meridian.  

In April, she was furloughed from work due to COVID-19. She will return to work once the patient case load increases. 

Fallon is looking forward to going back to work and continuing to aid patients with physical therapy. She has enjoyed being able to spend more time with Riley during her work furlough, but is looking forward to getting back to work and helping others. 

Fallon Beckham is very passionate about raising her son Riley, her job and being a nice person without passing judgement.





TWICE-BAKED 

POTATO

CASSEROLE 



1 pkg. bacon or real bacon bits 

16 oz. sour cream 

5 chopped green onions 

1 pkg. shredded cheddar cheese

5 russet potatoes 

Butter or vegetable oil 



Grease casserole dish. Peel and slice potatoes. Bake potatoes at 400 degrees for about 35 to 40 minutes, or until soft. Cook bacon (I bake it); let cool. Chop or use package of real bacon bits. Put 1/2 potatoes to side. Layer potatoes, sour cream, green onion, bacon and cheese. Repeat layering. Place back in oven about 10 minutes, or until cheese is melted on top. 



SLOW COOKER POT ROAST 



2-4 pounds chuck roast 

1 pouch of ranch dressing mix 

1 pouch of Au Jus Gravy 

1 stick butter 

-potatoes 

-carrots

-beef broth (1 cup) 



Add roast to the bottom of the crock pot. Add Au Jus mix, ranch mix and stick of butter. Cover and set crockpot low for 8 hours. Add beef broth, potatoes and carrots. (4 hours into cooking) 



CORN DIP 



1 can yellow corn 

1 can white corn 

1 can Mexican corn 

1 (4 oz) can Green Chiles (diced) 

5 green onions (chop) 

1 (8 oz) sour cream 

3/4 cup mayo

10 oz shredded cheddar cheese 



Mix everything together. Chill over night. Serve. Enjoy.
